What is the point of amendments if they can just make one to make the others obsolete.?

For example, the 18th amendment is the prohibition of alcohol. This made alcohol illegal in the United States. Then a couple years later another amendment comes along and repeals it. The 21st amendment just canceled it. Can this be done with all of the amendments? If so, whats the point?
